http://www.thelowcarbgrocery.com/
A great resource for people who are looking for low carb options! They have everything from low carb noodles to cookies and even candy! Its a great alternative to local grocery stores that may not have many options available.
I've ordered La Nouba No Sugar Chocolate Bar-Coconut Cream filled bars. They taste great and only have 1.4 net carbs! I've also ordered Lilly's Sugar Free Chocolate Biscotti (they're ok, but you can tell they are low carb) and GG Scandinavian Bran Crispbread ( I don't enjoy these at all, I don't find them a great alternative to regualr crackers or toast).
I would recommend the store because of the vast product selection, reasonable shipping charges and quick shipping/customer service. And a bonus is they ship via Canada Post so the package will be delivered directly to your mailbox! (no need to wait for a courier to deliver)

Lemon Chicken with Dill

My first recipe!
Ingredients:
4 boneless, skinless chicken breast
1 lemon
1/2 red onion
2-3 cloves of garlic
3-4 tbsp of light mayo
olive oil
FRESH dill (2-3 tbsp)
black pepper to taste
1. preheat oven to 350°. line roasting pan with aluminum foil (for easy cleanup) and spray with Pam w/ olive oil.
2. place chicken on tray, cover with black pepper, a few slices of lemon (1/2 lemon), diced onion, chopped dill and a few gloves of garlic. try to make sure the chicken is covered with the ingredients. put in oven for 30 mins.
3. in a bowl mix mayo, lemon zest and juice (1/2 lemon), black pepper, 1 tbsp fresh dill, 1 clove of chopped garlic and 1/2 cup of olive oil. mix until the sauce is emulsified. place in fridge until needed.
4. cover chicken with aluminum foil for the last 10 mins of cooking so it doesn't dry out.
5. serve with 2 tbsp of sauce drizzled over the chicken and a fresh garden salad (you can use the lemon sauce or your favourite dressing)
This is great quick meal. It is low in fat, sodium and carbs. And even better, its a 1 pan dish (for easy cleanup!)
Heavy to Healthy!

My first post!
I've started the journey to get healthy (and I've decided to take an early start to a New Year's resolution because we all know how those end....)
This blog is about my food finds, tips, recipes and hardships! Going from a heavy brown (carb/sugar/salt) diet to a healthy (colourful/green) diet is my plan. I've always loved to cook, but I had gotten lazy in the past year with takeout, microwaved & reheated foods. I'm ready to explore fresh flavours, new ingredients and the joy of cooking again!
I hope you enjoy my journey :)
