Lemon Chicken with Dill
















My first recipe!

Ingredients:

4 boneless, skinless chicken breast
1 lemon
1/2 red onion
2-3 cloves of garlic
3-4 tbsp of light mayo
olive oil
FRESH dill (2-3 tbsp)
black pepper to taste


1. preheat oven to 350°. line roasting pan with aluminum foil (for easy cleanup) and spray with Pam w/ olive oil.

2. place chicken on tray, cover with black pepper, a few slices of lemon (1/2 lemon), diced onion, chopped dill and a few gloves of garlic. try to make sure the chicken is covered with the ingredients. put in oven for 30 mins.

3. in a bowl mix mayo, lemon zest and juice (1/2 lemon), black pepper, 1 tbsp fresh dill, 1 clove of chopped garlic and 1/2 cup of olive oil. mix until the sauce is emulsified. place in fridge until needed.

4. cover chicken with aluminum foil for the last 10 mins of cooking so it doesn't dry out.

5. serve with 2 tbsp of sauce drizzled over the chicken and a fresh garden salad (you can use the lemon sauce or your favourite dressing)
This is great quick meal. It is low in fat, sodium and carbs. And even better, its a 1 pan dish (for easy cleanup!)
